Fried Okra

Ingredients

Okra fresh     1 Pound.
Corn Meal     2 Tbsp.
Salt & Pepper     To taste.
Oil     2 Tbsp

Method

Mix Corn Meal,Pepper together & set aside. Trim the edges of Okra & wash them. While still damp,toss in with the Cornmeal mixture. Heat Oil in a pan, add Okra & cook fot 4-5 minutes till tender. Sprinkle Salt over & Serve Warm as a side dish .

Delicious Sandwiches
Apples and carrots make a delicious sandwich combination.

Cooking Time : No cooking. Preparation Time : 5 mins.

Makes 3 sandwiches.

Ingredients

9 bread slices

To be mixed for the Apple spread

1 apple, grated
1 tablespoon cheese spread
salt to taste
pepper to taste

To be mixed for the Carrot spread

3/4 cup grated carrot
2 tablespoons cheese spread
salt to taste
pepper to taste

Method

Apply the apple spread on one bread slice. Sandwich with another slice of bread. Spread a layer of the carrot spread and sandwich with a third slice of bread Repeat to make 2 more sandwiches. Remove the crusts and cut into 4 triangles.

Khaman Dhokla
A traditional Gujarati snack, prepared in a jiffy.

Cooking Time : 6 min. Preparation Time : 10 min.

Serves 4.

Ingredients

For the garnish

1 tablespoon chopped coriander
1 teaspoon chilli powder

For the tempering

1/2 teaspoon mustard seeds
1/2 teaspoon sesame seeds
2 green chillies, chopped
a pinch asafoetida (hing)
1 tablespoon oil

Other Ingredients

1 cup Bengal gram flour (besan)
1 1/2 tablespoons semolina (rawa)
1/2 teaspoon citric acid crystals
3 teaspoons sugar
1 teaspoon green chilli-ginger paste
1 1/2 teaspoons Eno's fruit salt
salt to taste

How to proceed

To prepare the tempering, heat the oil in a small pan and add the mustard seeds. When they crackle, add the sesame seeds, green chilli and asafoetida and remove from the fire. Add 1 tablespoon of water and pour the mixture over the steamed dhoklas. Garnish with the coriander and sprinkle with the chilli powder. Cut into pieces and serve with green chutney.

Method

Combine all the ingredients except the fruit salt in a bowl and make a batter using 1 cup of water. Add the fruit salt. Sprinkle a little water over the fruit salt and mix wel. Pour half the batter into a greased 150 mm. (6") diameter microwaveable container and cover with a plastic wrap. Microwave on HIGH for 2 minutes. Allow to stand for 1 minute. Repeat with remaining batter to make 1 more tray of dhoklas. Keep aside.
